Underwood continued to grow across the decades. In 1869, the Chicago, Rock Island & Pacific Railroad was constructed through the area. The town was later named for the first engineer to drive a train over the Milwaukee tracks, honoring its connection to regional rail history.
By 1902, the community added sidewalks and built a town jail, a $140 project that reflected Underwood’s steady municipal growth. In 1903, these improvements were officially presented to the town.
More recently, in 2019, the Garcia Family Restaurant opened on Main Street. After months of searching for the right location, the owners chose Underwood because it offered both opportunity and a welcoming sense of home. They filled a local dining gap by offering authentic Mexican cuisine between Harlan and Council Bluffs, particularly appealing to those traveling near the interstate.
